Butchery & Meat Processing

Course Description

Prime Education is a hybrid curriculum designed to offer specialized virtual badges in the fundamentals of meat processing. Specifically, Prime Education will offer multi-part online modules covering topics ranging from broad conceptual concepts such as “Introductory to Meat Processing and the Industry” to more specific concepts such as “Humane Harvesting of Red Meat Species” and “Fresh Meat Fabrication and Cutting”. Additionally, enrolled participants that successfully complete the online training modules will be invited to Loeffel Meats Laboratory at University of Nebraska-Lincoln to engage in 3 separate hands-on learning opportunities aimed at humane harvesting of red meat species, fresh meat processing, and advanced further processing of meat. Finally, upon successful completion of the entirety of the curriculum, participants will have gained valuable insight and skills that will allow them to easily enter into the meat industry as a capable and skilled meat processor.

Learning Objectives

  1. Develop a foundational understanding of production practices, food safety, and meat processing equipment.
  2. Gain knowledge and understanding of humane harvesting, fresh meat fabrication, and further processed meats practices.
  3. Gain knowledge and understanding of packaging, labeling, and retail merchandising of meat products.
